Made with finely shredded couve-galega, potatoes, and of course, a slice of chorizo to add the finishing touch, Caldo Verde is simple yet bursting with flavour. Recognised as one of the 7 Wonders of Portuguese Gastronomy, this dish is a true classic that has spanned generations and won countless hearts. Here in Alto Minho, it’s served with local cornbread, making it the perfect way to warm your belly before continuing your journey through the flavours this land has to offer.
Meat Dishes
If there’s one thing we excel at, it’s preparing a good piece of meat.
The famous “Carne da Cachena” from Arcos de Valdevez is the perfect example of how local products can turn a meal into a genuine taste experience. This succulent meat, paired with the traditional “Arroz de Feijão Tarreste”, brings the very best of the region to your table.

In Paredes de Coura, the trout is cooked to maintain its freshness, reflecting the purity of the region’s waters, and has even been immortalised in Portuguese literature in Aquilino Ribeiro’s “A Casa Grande de Romarigães.” Meanwhile, the “Debulho de Sável”, typical of Vila Nova de Cerveira, makes use of the lesser-known parts of the shad – “sável”, transforming them into a fragrant rice dish seasoned with spices and herbs, creating a delicacy that marries the creativity of the Minho people with the intense, distinctive flavour of the river.

ABOUT CIM ALTO MINHO
The Intermunicipal Community of Alto Minho (CIM Alto Minho) was established on October 15, 2008, under Law No. 45/2008 of August 27, which defines the legal framework for municipal associations. It encompasses the municipalities corresponding to the NUT III region of Alto Minho: Arcos de Valdevez, Caminha, Melgaço, Monção, Paredes de Coura, Ponte da Barca, Ponte de Lima, Valença, Viana do Castelo, and Vila Nova de Cerveira.
